Sometimes, I just need a change. In this case, switched from Apophysis to Chaoscope.

Today’s Gratitude Item: Okey Dokey apples*. They are just coming in season and are tart and crisp. Just the way apples were meant to be. They are particularly delicious when cut into slices, wrapped in filo pastry, sprinkled with cinnamon and sugar and then baked in the oven for about 20 minutes. Served with ice cream of course.

*Okey Dokey apples are one of the many varieties of apples available over here. They are a smaller version of “Gala” apples and are crunchier than the ever popular “Pacific Rose” variety.

    Mmmmmmmm, I know just what you mean. In Holland, we eat them on New Year’s eve. But the apples are sliced into rings …not wrapped into filo pastry and baked in the oven,(although that way is probably healthier)but dipped into batter, fried and then sprinkled with cinamon and sugar. We call them “appel flappen”

    Actually, that is how we developed the recipe for wrapping apples in filo. We also used to fry them in batter, we used to use bananas as well. Basically its your standard apple / banana fritter but covering in filo and baking is less fat and tastes wonderful.
